As passionate foodies, we are constantly on the lookout for the best-quality produce. Our key speciality is fresh fish and shellfish, but we also offer a range of other items from carefully chosen food partners. Many of these are small, family-run businesses – often local – dedicated to creating the finest-quality products.
FISHERMEN & FISH MARKETS
Most of our wild fish and shellfish is caught in British coastal waters, mainly in Devon, Cornwall and Scotland, especially around the Shetland Isles. We support traditional fishermen and small-scale, independent fishing businesses, which have been at the heart of communities for centuries. We buy from individual fishermen as well as from the two main fish markets in the south-west.
Brixham Fish Market
With a strong tradition dating back to the 14th century, Brixham in Devon is now England’s largest fish market by value of fish sold. We buy from a variety of boats that fish sustainably in the English Channel.
Newlyn Harbour Fish Market
Newlyn Harbour houses one of the most significant fish markets in the UK and is believed to land the largest volume of fish by weight in the country – up to 40 different species each day, including hake, turbot and mackerel.
Shetland Seafood Auctions
Although most of our fresh fish comes from Cornwall and Devon, we also buy some fish (mainly mackerel and some white fish) from the rich, diverse fishing grounds of the Shetland Islands. There are two main fish markets – in Lerwick and Scalloway.
Kernow Catch
Based in St Agnes, on the north coast of Cornwall, Kernow Catch is a small family business run by Kyle Neal. Kyle’s grandfather, John 'the Boot’ Earl, was New Wave’s first direct Cornish supplier back in 1991. We have an exclusive with Kernow to produce top-quality crabmeat and dressed crabs, all done by hand. We also buy live crabs, live lobsters and day-boat-caught fish from them. Kyle has a wet-fish shop in Chapel Porth, St Agnes. If you are in the area, pop in and see him!
Newlyn Crab Company
Based in Cornwall, Newlyn Crab Company is a family-run firm that catches crab in a sustainable way, using crab pots, and produces high-quality, fresh, handpicked, vacuum-packed crabmeat. It is one of the few crab-processing companies in the UK that holds a BRCGS Global Standard Food Safety Grade A.
FISH & SHELLFISH FARMERS
All our farmed fish and shellfish comes from BAP-certified producers, ensuring quality and health and safety standards are adhered to. BAP is the only seafood-specific certification programme that can certify every step in the production chain. Here are just some of the fish and shellfish farms and products we deal with in the UK:
Loch Duart salmon
Sought after by some of the world’s best chefs, Loch Duart salmon is raised in the crystal-clear waters of Sutherland, on the north-west mainland, and the Hebrides. Raised from wild Scottish ancestors, these salmon have a healthy, natural diet (no hormones or antibiotics are ever used) and plenty of space to swim. The result is an eye-catching colour, a strong torpedo shape, firmer texture and delicious flavour.
Shetland’s Finest
The rugged coastline of Shetland, with its sheltered inlets and Grade A waters, provides the perfect environment to grow some of the UK’s finest mussels. These large mussels are free from grit, with clean shells and 25 per cent meat content. Rigorous testing prior to harvest ensures the mussels are free from shellfish toxins. The company also sources wild-caught scallops.
Maldon Oysters
Essex oysters (sometimes known as ‘Essex Gold’) have been regarded as some of the best in the world since Roman times. In 1962, the Maldon Oyster Company was established in the Blackwater Estuary, famed for its salt marshes, which give these oysters their distinct flavour and meatiness. Today, most oysters raised in the beds are rock oysters, nurtured for years until they reach their prime.
ChalkStream® Trout
Produced on farms in the Test and Itchen rivers in Hampshire, ChalkStream® trout are among the best freshwater trout in the UK. Raised in conditions similar to wild trout, they are slow-grown for two and a half years, live in fast-flowing, pure chalk stream water, and have a relatively high-protein, low-oil diet. The result is a lean fish with a unique, clean taste.
Bibury Trout Farm
Britain’s oldest working trout farm and only a few miles away from New Wave in Gloucestershire, Bibury Trout Farm is a leading producer of freshwater trout, both brown trout and rainbow trout. The farm also supplies us with smoked trout, smoked at Severn & Wye Smokery.
SMOKED FISH PRODUCERS
We supply a range of smoked fish products from suppliers that continue to use traditional methods and do not use dyes or additives.
Severn & Wye Smokery
Based in Gloucestershire, the Severn & Wye Smokery is one of the most highly acclaimed smokeries in the UK, holding a royal warrant and supplying the world’s leading chefs and food halls, as well as New Wave. The company smokes only the best-quality fish in the traditional way.
Chapel & Swan Smokehouse
The artisan smokehouse, Chapel & Swan, has been smoking fish in traditional brick kilns in Suffolk since 2004. They supply us with their hot smoked and cold smoked salmon, including their sustainable smoked salmon.
GROWERS OF SEASONAL PRODUCE
A select range of UK growers supply us with fresh seasonal produce. We are particularly fortunate in being located close to the Vale of Evesham, renowned for being a centre of market gardening.
Wye Valley Produce
This is owned and run by the Chinn family, who have been farming at Cobrey Farm in the Wye Valley for four generations and pride themselves on growing the finest British produce. Particularly famous for its asparagus, which is one of our bestsellers, the farm also produces rhubarb, blueberries and green beans.
Isle of Wight tomatoes
The best British tomatoes come from the Isle of Wight, due to the maritime climate and extra sunshine hours. As a result, we stock a wide range of tomatoes from the island, all of which are left to ripen on the vine and are bursting with sweetness and flavour.
Westlands
One of our bestsellers is samphire, grown sustainably at Westlands in nearby Vale of Evesham. The company also offers a range of sea vegetables, herbs and microleaves, to add interest to your menus.
Sunbeam Watercress
A family-run business set up in 1934, Sunbeam Watercress produces the highest-quality watercress, grown and matured to perfection in Hampshire’s beautiful natural chalk spring water, giving it a unique, strong, peppery taste. Only traditional methods are used on the farm, and the watercress is all grown, cut, washed and packed by hand.
